Three Days Ahead

  • Make Sweet Potato Rostis and freeze them in a single layer in the freezer
  • Defrost duck,

Two Days Ahead

  • Make the Horseradish cream for the rostis and store in an airtight container in the fridge
  • Rub spice mix over duck and store in fridge to dry

One day ahead

  • Roast duck. Cool and then store int he fridge until ready to serve
  • Wash and dry salad leaves – store in paper towel in bottom of fridge, ready to use

One hour ahead

  • Place frozen rostis in warm oven to warm through
  • Make clafoutis batter
  • Par-cook green beans and cool in iced water, ready to serve.
  • Flake trout into small pieces

30 minutes ahead

  • Prepare cucumber for rostis
  • Toss salad for duck, but do not pour dressing over
  • Make hoisin dressing.

15 minutes ahead

  • Assemble rostis onto serving platter
  • Cut up duck into large pieces, arrange salad on platter, add dressing
  • Place clafoutis in oven
  • Toss green beans in warm oil and lemon, place in serving dish

Between first and second course

  • Remove clafoutis from oven, allow to cool to room temperature before serving.
